MOTD - Easy Spanish Rice, Beans, & Chicken

MOTD-Meal of the Day

Hi Loves!! I decided to change things up with this blog entry. I'm going to share with you ladies my easy Spanish rice, beans, & chicken meal. This meal does not involve a lot of experience in the kitchen, it's also really quick because I don't do it all from scratch. I hope you enjoy!!

Please note: I used the camera on my phone for these pictures so they're not always of the best quality.

I'm going to give you the cooking instructions in the same order that I prepare the meal.

Begin by preheating your oven to 450 degrees.

Chicken
Prep Time - 2 minutes
Cook Time -30-40 minutes.
Ingredients needed - chicken breast tenders & *mojo criollo.
*Mojo Criollo is made of garlic, onion, and citrus; other seasonings aren't needed when you use this.


I begin with chicken breast tenders, mojo criollo, & an aluminum baking pan.

 I place the chicken into the aluminum pan and then pour one cup of mojo criollo over the chicken.

Then I place it in the oven for 30-40 minutes, you pull it out from the oven when the chicken is full done, internal temperature should be 160 degrees.

I shred the chicken by pulling the chicken apart with two forks.

Rice 
Prep Time - 2 minutes
Cook Time - 25 minutes
Ingredients  needed- Canilla rice, water, butter,& salt.


Combine 1 cup of canilla rice, 2 cups of water, 1 tablespoon of butter (you can substitute with corn oil or Olive Oil), & 1 teaspoon of salt - stir rice & bring to a boil.


Lower the heat & apply a lid covering in *aluminum foil.
*Aluminum foil holds in the heat & allows all of the water to be absorbed evenly, resulting in perfectly cooked rice.


Continue to cook until all of the water is full absorbed,

Beans
Prep Time - 2 minutes
Cook Time - 15 minutes

Ingredients Needed-Small Red Kidney Beans, 1 cup of water, 1 packet of Sazon (sin achiote), & 1 tablespoon of sofrito.


Combine all the ingredients together in a saucepan over low heat, stirring occassionally,  & warm for 15 minutes.

For me part of enjoying this meal also has to do with how everything is combined.

I use a bowl - first place the rice & pour the beans over it.


Then I add the shredded chicken & *avocado. *Avocado brings this all together for me, but this is a personal preference.

Simple, easy, & yummy!!!

  3. T, this looks so yummy! MG loves dishes with red beans & rice, so I'm going to have to try this sometime :) not sure if all the spices/marinades are safe but I'm sure I can figure out substitutes. thanks for sharing with us :)
